Here's more info from my culinary source:
Places to purchase the curd here. It's best not to buy frozen or freeze it after you get it. So, order it right before you plan to use it.
Instructions on stretching the curd here.
I'll be in Atlanta this weekend seeing Sharon Jones and hopefully eating some great food. So, I'm going to order my curd late next week for the weekend.

the natural l food store in NOLA that I picked up curd and cultures from has since closed. damn. I might be able to find some here in NYC if you like.
BTW, COOL 'bout Sharon Jones, she's AWESOME (we're going on FEB 15th here at Beacon Theater). She's also down in NOLA on the 24th
While in the ATL you gotta go to the International Farmers Market. It ROCKS!
One of the curd links is to Todaro Bros. which is in NY. I think that's where I'm going to order from.
Yeah, I'm excited about the SJ show. Do you know if the farmer's market is open every weekend? Or is it one of those once a month things? Their web site had little info, but there was a number I can call.
Are you back from LA? I ready to hear about the food!
far as I know, it's open every weekend, but the winter may be different
