
So, my Mom is making Easter lunch tomorrow and I'm already thinking about her deviled eggs. I always thought of them as a uniquely Southern snack, but a little research this morning changed my mind. Apparently, people have been stuffing their eggs with a spicy mixture since Roman times. There's quite a thorough article here, complete with historical recipes. The term "deviled" didn't come until later, but it refers to the spicy ingredients.
Southern Foodways Alliance also has a deviled egg oral history project. So you can get all the current lore and lots of competing family recipes. Pictures to come on Sunday.

I ate a couple for you and then some. After eating them for the last five meals, I think I'm good until Thanksgiving.
