How We Do It In The Delta


I have discovered a new species of tamale – the fried tamale. On the way back from business in Little Rock, we stopped somewhere around Grace, MS. We attempted to get tamales at B&B, but they were out. A good sign. So, down the road to Farmer's Grocery. Their tamales had been taken out of the husk and fried. There did not appear to be batter, but there was a crunchy crust. They were served with a sauce that I can best deconstruct as tamale sauce mixed with ranch dressing. A nice late afternoon snack, but not yet complete. To wash it down, a king can of the champagne of beers – Miller High Life. That's how we do it in the Delta. Thirty-two ounces and a beautiful sunset later, we were home.
